So people on the reprap irc said to use shelving board. That chipboard that’s coated in white melamine. What do you guys think? They said to use 20mm

Sounds fine. Shelving board is either chipboard or mdf, depending on where you get it from.

Also, I highly recommend hanging out in the reprap irc channel, you’ll learn a lot.

“Too thick” is only defined by how your parts are printed. If you are using the JSCAD sources to generate your own parts, then, well, you could go however thick as you can get printed. I’m usually in reprap myself, but have been busy lately.
