lol I have a 36" pen plotter I converted to a vinyl cutter.
That’s a bit like converting a 3D printer to a CNC. The reverse is much easier in both cases I think…
All it takes is a knifeholder and the cutting strip across the bed.

It works pretty well, but you still need to weed carefully - the mechanism doesn’t have much weight/downforce to it so some cuts need help.
