I wanted to have your point of view on power supplies where do you buy them ? which brand do you suggest ?
I have some doubt that my power supply are not that stable

I buy the cheapest PSUs on eBay or Aliexpress. Never had any issues (maybe just lucky 
But… always over spec your PSU, if your setup needs 5 amps, go for a 7 or even 10 amps PSU if you do not mind the larger size.
I’ve had good luck with Meanwell supplies; direct from Alibaba they’re still really cheap. Agree with @JP_Roy that it’s a good idea to over-spec them by about 20%.
Hi ordered different types on Ali, never had a pb. As usual wait 3 to 5 weeks.
As mentioned by JP and Robert, last time I had to power 500 LEDs I choice to use 2 power supply at same time getting me some margin and making sure heat is ok rather than having a big one.
I use Meanwell 5V 12a IP 67 supplies that I get from Allied Electronics. So far so good! They put out about 5.25V.
For temporary / short-term / don’t care if it’s not reliable installations I use random cheap eBay etc PSUs.
For everything else I exclusively use Meanwell as they’re reasonably priced, very robust, super reliable, easy to adjust, and provide clean output.
One very important note – I strongly suggest using inline fuses (rate them for a small margin above ‘white’ (ie full power / #FFFFFF)), and placing them immediately adjacent to the LED string.
Shorts (or near shorts) at the end of a run of LEDs are not necessarily seen as a short by the PSU (think resistance of feed cables and the power line of the LED strip itself). The PSU is happy to dump many amps into the power line, and a low resistance bridge can very quickly cause a fire.

Indeed my strips have 120 leds hence > 7a max so an 8a fuse would do the trick.
