I am working on a project that has two independant series of patterns on two different strips. I am looking for some software that would allow me to visuaize the timings of the patterns next to each other so I can see the interacton of the two light programs…

Maybe you could output two or more values to the Arduino’s serial plotter. Then you can get a visuals like this:
