I have a computer PSU that I use to supply power for my FastLED tinkering – and I have a couple more available that I’d like to convert for more permanent projects. I’m thinking of adding a voltmeter and amp meter to each supply, so I can see what’s happening at a glance. I have a very basic question though. Does the amp meter measure the AVAILABLE amps, or the amount of amps being DRAWN at any given time.

It measures the amps being drawn at a given point.

Pay attention to the max amps you can get. At 5V you can have X amps, at 12V is another value. Read the label and you will find it.
