I’m currently using ChiliPeppr with Arduino Uno and Gshield. If I upgrade the Arduino from Uno to Due, would I still have the option of using Grbl, or would I be forced to use Tinyg G2 ?
Grbl only runs on 8 bit avr boards, namely the uno as you said. So if you wanted to use a due (32 bit), tinyg2 is the best choice for firmware
You can use the same gShield with both boards, but separately. Or you plug the gShield into Arduino Uno flashed with grbl or ArduinoDue with TinyG2. Remember that limit pins and VCC differ, so rewiring is needed. I have two gShield boards to avoid confusion.
I have an Arduino Uno with gShield and grbl. Is it worth getting a Due to use still with gShield to upgrade system or is it better to wait and get a TinyG?

@Andy_L Beware that some may find G2 more bleeding edge than to their liking. The lack of persistence (EEPROM) requires some workarounds, well supported by Chilipeppr. There is not a cleanly supported 4 driver version of GShield as yet, if you are a heavy user of NEMA23s, DUE plus Gshield may not be your best choice, on the other hand tinyG2 on DUE can support up to 6 steppers with external drivers.
That said, more speed (cpu) and more ram are always good, G2 is the future. Up to you to decide how close you want to be to the horizon,
