setting Z height at start of printing

I am having trouble setting the z-height. When I start a print it is too high. I have an inductive Z probe/endstop set up. I thought I could simply run an M212 commend and set a negative Z height and save it to the override configuration file but that is not working. G29 does not work however it is not listed in the G-code list and for that matter M212 isn’t either. If anyone could let me know how to set my Z-height that would be great. I am obviously missing something fundamental and I have spent a lot of time pouring over the site trying to find an answer.

So I found that using and saving the Z offset with a M206 was moving my print head higher when I used a negative integer. Having a CNC, another printer, a plasma CNC, moving the head closer to the bed once Z was homed to 0 would be a negative Z move this all confounded me until I figured out what was going on. I had bed leveling turned on so I started over with a clean config file and noticed this issue. Once I entered Z offset as a positive integer I am all set now. Talk about a paradigm shift. I would appreciate it if someone can explain this to me. Thank you-
